Sommelier advice

Red: power and scale require creating chords on the same register. The square structure of virile tannins of the Echezeaux appellation imposes the roast lamb, the prime rib and the pieces of game, feathered and especially furred. Autumn or winter dishes, with the associated atmospheres, reinforce the deep and fleshy personality of these great wines from the Echezeaux appellation; for example braised beef and pork, or even fine red meats. Furthermore, the beautiful raw milk cheeses with washed rinds always do them justice.

Serving temperature: 15 to 16°C.

The Grands-Échezeaux extend the Musigny on the southern axis of the Coast, following a less hectic, more regular pattern. They are separated from it by the bottom of the Orveau valley. The Échezeaux cut the entire hillside between Clos de Vougeot and the Premiers Crus of Vosne-Romanée. The GrandsÉchezeaux and the Échezeaux (AOC Grands Crus of July 31, 1937) are, like the Clos de Vougeot which is separated from it by a wall, foundations of the Cîteaux Abbey from the 12th and 13th centuries. Terroirs

Jurassic geology (175 million years old). The Grands-Échezeaux are quite homogeneous, close to the upper part of Clos de Vougeot (slope of 3 to 4%, clay-limestone soils and Bajocian limestone slab), at 250 meters above sea level.
Les Échezeaux offers more diverse soils (Bajocian marl and stony covering in general). Depending on the climate, they range from 230 to just over 300 meters above sea level (13% slope at mid-slope). Here, in the upper part, we encounter deep soils (70 to 80 centimeters). Pebbles, red silt, yellowish marls, etc. constitute a fairly complex mosaic.
